Chocolate cookies

Delicious, Vegan & only 5 ingredients (!)

 

What is the “perfect” cookie? 

Is it crunchy? chewy? 

 

I believe the answer depends on your own taste buds, because the truth is there is no ultimate perfect cookie that everyone will unanimously agree on.

But here comes the almost unanimously perfect cookie recipe.

 

The beauty with this recipe is the dynamic result you can achieve. The longer you let the cookies sit in the oven - the crunchiest the cookies are, but if you're more of a chewy type-of-cookies person, then less time in the oven will get you the best result for you!

 

And have I mentioned yet the cookies are made out of only 5 simple ingredients and are so easy to make?

5 Ingredients:



  • 1 classic flavored 7th Heaven chocolate table 
  • 3 teaspoons of plant-based milk (whatever you like… I used sweetened soy milk)
  • 3 tablespoons of liquid sweetener (agave, maple…)
  • 4 tablespoons of almond-butter
  • 1 cup of self raising flour



Instructions



  1. Preheat the oven to 150‏°C degrees (turbo mood) / 350‏°F
  2. Line the baking pan with parchment paper
  3. In a bowl - break the chocolate into cubes and add the plant-based milk and 2 tablespoons of the liquid sweetener.
  4. Set the bowl gently over a pot with hot water (bain marie), or in the microwave for about 30 seconds. carefully pay attention: you wouldn't want to burn the chocolate or the sweetener. The texture should be smooth after stirring.
  5. Mix in the remaining sweetener (1 tablespoon) and add the almond-butter.

Make sure to give it a good stir. texture should thicken.

 

  1.   Add the self-raising flour and mix to combine the ingredients,  being careful  
          not to over mix (it is very important for the final result).

 

  1. Wet your hands and make the cookies. Place at intervals on the tray.
  2. Bake for about 8-12 minutes (depends on your oven, on the size of the
    cookies, and of course if you want their texture to be chewy or crunchy) 

They won't be stable at first and most likely you will think they're not ready- but trust me, after cooling down for about 20 minutes, they will form just fine. (if after that time they are still too soft, put them back into the oven for another few minutes).

Optional:

 

You can add some chocolate chunks to the mixture before baking it,
or any other addition you'd like.

Before baking I added sprinkles.

After baking I sprinkled some powdered sugar on top.
